A chicken curry the mauritian way

“Tell me what you eat, I’ll tell you who you are,” said Brillat-Savarin. If you like a good curry chicken with basmati rice, faratas, lentils and chutneys, you’re probably in love with Mauritius or Mauritian citizen ! Main dish of the mauritian cuisine, the chicken curry is something you should absolutely try during your trip to Mauritius island. And to help you cook one back home, here’s a good recipe:

Mauritian chicken curry for 6 people:
1 whole chicken
3 tablespoons of oil
2 clove of garlic
1 clove ginger
1 onion, finely sliced
2 tablespoons of curry powder
1 chopped chilli (optional)
4 “pommes d’amour” (small local tomatoes)
Salt and pepper

Cut the chicken into pieces (wings, legs, white). Marinate the chicken for 10 minutes with salt and pepper.
Cook chicken in a skillet for about thirty minutes, then keep it appart.

Fry the onions until they are golden brown.
Add the garlic, ginger, the tomatoes cut into pieces, curry powder and 3 cups water. Also add the chilli, if you want some.
Simmer for a while.
When the onions and tomatoes are cooked, add the chicken and simmer again, slowly.

An alternative is to add some shrimp is delicious!
