Fried “mine” recipe

A dish enjoyed by all Mauritians: fried mine or “mine frire” ! Here is the recipe.

– 1 kg of noodles
– 4 eggs
– 2 carrots
– 100 g white cabbage
– 200 g shrimp
– 200 g chicken breast
– 1 Chinese sausage
– 4 tablespoons of soy sauce
– 4 cloves garlic, chopped
– 1 bunch of chives cut into pieces about 2 cm
– Salt
– 2 tablespoons of sunflower oil

Mine-frit-ile Maurice

Wash vegetables. Peel the carrots and cut them into sticks.
Chop the cabbage and Chinese brède.
Cut the chicken into small pieces.
Blown up chicken.
Whisk egg, salt and cook the omelette. Cut them into strips.
Sauté vegetables in a wok, add noodles and cook. Add the soy sauce.
Add the chicken and season with salt.
All blown up a few moments.
At the end, sprinkle with chives and omelette strips.

I really enjoy put even some soy sauce just before eating it…delicious !
