I love to talk about Mauritian cuisine, the local street food or the savory dishes like red sauce shrimp. But to vary a bit, let’s talk about the dishes that you can not enjoy in Mauritius. Even if blending subtle flavors and mixing cuisines is successfully practiced on the island, the hot and humid climate is not suitable to tasting every kitchen! So finally what is the dish that really does not make it in Mauritius ?
For me it will be the tartiflette! Potatoes, ton of cream, dripping reblochon and fried bacon is delicious! But not very light!
So a small tartiflette, half naked in a tent, at midnight in mid-July, near the Mare aux Vacoas, may be akward but climate wise alrigth. But the Alpine winter seems more appropriate for this savoyard dish that Mauritian winter!
